- Pastallio Spaghetti

- Curry powder

- Vegetable broth

Method
1. Make the Jollof Base
Blend tomatoes, onion, red bell pepper and Scotch bonnet peppers until smooth. Set the blended mixture aside.
2. Cook the Sauce
Heat vegetable oil in a large pan. Add the blended tomato and pepper mixture and cook until the sauce thickens.
Stir in thyme, curry powder and salt. Cook until the flavours come together and the sauce becomes rich and aromatic.
3. Add the Pasta & Simmer
Add Pastallio Spaghetti and vegetable broth to the sauce. Stir well, cover and cook over low heat until the spaghetti is perfectly cooked and has absorbed the flavours of the Jollof sauce.
4. Serve & Enjoy
Once the spaghetti is cooked, gently fluff it and adjust the seasoning if needed.
Garnish with fresh basil, if using, and serve hot.
